The Best Calamares Recipe

Recently I have seen a numerous food carts that offers this very enticing finger food, the calamares. Initially this food is being served in bars and restos together with some beers. A very good tandem indeed. With the growing popularity of calamares here in the Philippines, we can’t blame our kababayans serving this fried squid in street carts. Yeah I know, they want to make a living out of it too.
I’m quite hesitant to try it before since most street foods are often said dirty and may cause you a lot of diseases but that didn’t stop me from tasting it. One thing that makes me wonder is that why most of the street foods are often much better compare to those being cooked at home. Hmm. That prompts me and my wife to look and research for a much better way of serving calamares right at your own comfort. Here’s our own version of it.
Ingredients:
- 1/2 kilo Squid (kalawang) sliced into 3/4 inch thick
- 500 ml Olive Oil
For the batter
- 1 cup beer
- 3/4 cup of flour
- 1/2 teaspoon paprika
- salt and pepper
- Mono Sodium Glutamate (MSG)
For the sause
- 1 cup Vinegar
- diced onion
- Sili (labuyo)
- 1 tbsp sugar
trick: Cook the vinegar for 5 minutes then let it cool.
Procedure:
Heat the pan of Olive Oil. Mixed all ingredients for the batter then dip the sliced squid unto it. Fry squid until crisp and golden brown. Serve now with sauce. Bon appetit!
